Ingredients:
2 cups flour
2/3 cup sugar (6 ozs.)
2/3 cup butter (6 ozs.)
3 eggs
21/2 teaspoon baking powder
2 tablespoons milk
Substitute half the milk with very strong black coffee.
1 teaspoon vanilla essence
Pinch of salt
2 tablespoons cocoa dissolved in 2 tablespoons hot water and cooled down
½ teaspoon cinnamon (optional)
Instruction:
Pre-Heat oven to 375°F
Sift the flour, baking powder, cinnamon (if used) and salt together.
Cream the butter and sugar until creamy and all the sugar dissolved.
Add the yolks of the eggs one at a time and mix well.
Add flour, milk and cocoa mixture alternatively mixing well in between.
Fold in stiffly beaten egg whites.
Bake Cake in prepared tins for +/- 25 minutes until cake springs back when lightly pressed in middle.
