PUMPKIN FRITTERS IN CARAMEL SAUCE

(2 dozen)

Can be enjoyed as a sweet vegetable or a pudding with a little lemon juice sprinkled over them.

Instruction:

Fritters

  1. Mix pumpkin and egg.

  2. Add milk and mix well.

  3. Sift dry ingredients together and stir into pumpkin mixture.

  4. Drop teaspoons of the mixture into hot oil in a frying pan and fry on both sides until slightly browned.

  5. Transfer to a serving dish and keep warm.

Sauce

  1. Heat the sugar, butter and cold water, stirring until it begins to caramelize.

  2. Add the boiling water at once and stir. Beware of spatters!

  3. Heat ¾ cup of the milk and stir in.

  4. Mix the custard powder and salt to a  paste with the remaining cold milk.

  5. Stir gradually into caramel mixture.

  6. Cook for 3 minutes, then spoon the boiling sauce over the fritters.
