Can be enjoyed as a sweet vegetable or a pudding with a little lemon juice sprinkled over them.
Ingredients:
Fritters

1 cup mashed, cooked pumpkin

1 egg
-
¼ cup milk
-
1 cup cake flour
-
2 t. spoons baking powder
-
¼ t. spoon salt
-
cooking oil for shallow frying.
Sauce
-
1 cup sugar
-
1 T. spoon butter
-
1/3 cup
-
¼ cup boiling water
-
1 cup milk
-
2 T. spoons custard powder
-
¼ t. spoon salt.
Instruction:
Fritters

Mix pumpkin and egg.

Add milk and mix well.

Sift dry ingredients together and stir into pumpkin mixture.

Drop teaspoons of the mixture into hot oil in a frying pan and fry on both sides until slightly browned.

Transfer to a serving dish and keep warm.
Sauce
-
Heat the sugar, butter and cold water, stirring until it begins to caramelize.

Add the boiling water at once and stir. Beware of spatters!

Heat ¾ cup of the milk and stir in.

Mix the custard powder and salt to a paste with the remaining cold milk.

Stir gradually into caramel mixture.

Cook for 3 minutes, then spoon the boiling sauce over the fritters.
