(makes 2 medium sized loaves)
Cooked, well-drained pumpkin is used.
Ingredients:

3 cups sugar

1 cup oil

4 eggs

2 cups mashed pumpkin

3 1/3 cups cake flour.

2 t.spoons bicarbonate of soda

1 1/2 t.spoons salt

1 t.spoon baking powder
-
¼ t.spoon ground cloves
-
¼ t.spoon cinnamon
-
¼ t.spoon ground nutmeg

1 cup water
Instruction:

Preheat oven to 350 deg. F.

Grease two 6-cup loaf pans and line them with wax paper.

Beat the sugar and oil together until mixed.

Add the eggs one at a time, beating well after each addition.

Add the mashed pumpkin and mix well.

Sift the dry ingredients together.

Stir the flour mixture and water alternatively into the pumpkin mixture.

Pour the batter into the pans.

Bake for about 1 ¼ hours.

Allow to cool slightly in the pans.

Turn out onto a wire rack, remove the wax paper carefully and allow to cool completely.
Tip.
The secret of successful muffins is not to mix the dough too much.
